Аbstract: The goal of this paper is to point at the possibility of risk assessment and adoption of foodstuff s sampling
plans for microbiological safety based on the results of multiyear food sampling. The results of microbiological food
analysis performed in the Public Health Institute of the Republic of Srpska – Regional centre Doboj in the period
2015 – 2019 were used as a sample.
